Ingredients

Kulfi
2 eggs
25 grams of icing sugar
150 ml of double cream
2 tablespoons of pistachio nuts (chopped)
½ teaspoon of ground cardamom
Vanilla essence
Green food colouring

Topping:
Nutmeg (freshly grated)
Pistachio nuts (finely chopped)

Method
Separate egg whites and whisk until stiff
Add one teaspoon of sugar and whisk briskly. Repeat until all the sugar is gone.
Whisk the yolks in a separate bowl, before combining them with the egg whites
Whisk the cream into peaks before adding it to the egg & sugar mix
Add the nuts, cardamom, vanilla, and food colouring and slowly fold in.
Scrape mixture into a pre-chilled polyethylene tub and freeze for 3 hours
Remove tub and gentle break up any ice crystals with a fork
Freeze for a further 2 hours before again breaking up any ice crystals
Return to the freezer for a minimum of 24 hours. Before serving

Serve in individual bowls and sprinkle with freshly grated nutmeg and chopped pistachio nuts.

Wow I have seen this on the menu many times in the restaurant but never had enough room inside me to try it :lol: The ingredients make it sound lovely. Have you actually tried this recipe Shy Guy?

Yes I have tried it and it is as good as it sounds. sdrool

I have another recipe somewhere for one made with condensed milk, however it contains over 100 grams of sugar so I thought this one would be better for Dreamer if she wants to try making that is. Blob5 _cheesygrin::
