vegetarian Recipes
Does anyone have some good vegetarian recipes. I became a vegetarian today, so now I need to learn some good stuff to cook. Plz keep the recipes easy, I am not a great cook. :roll:

MEXICAN VEGETABLE SAUTÉ

Makes 4 servings
Each serving equals one and one half servings
Starchy and squash-type vegetables may be varied according to the seasons.

Ingredients
2 Tbsp vegetable oil
½ cup onions, chopped
2 cloves garlic, peeled, halved and thinly sliced
2 fresh Jalapeno chilies, seeded and cut into thin strips
1½ cups cooked plantains, peeled and diced
1½ cups zucchini, diced
½ cup whole kernel corn
1 Tbsp fresh cilantro, chopped


Heat oil in a large skillet; sauté onion, elephant garlic and chilies over medium-low heat for 3 to 5 minutes, or till garlic is tender (do not allow vegetables to burn)

Add potatoes and squash; sauté 5-10 minutes more or till squash is tender.

Add corn and cilantro; season to taste.

Cook until warmed through.


Nutrition information per serving: Calories 147, Protein 3g, Fat 5g, Calories From Fat 26%, Cholesterol 0mg, Carbohydrates 27g, Fiber 3g, Sodium 33mg.

ROASTED MUSHROOMS & MIXED VEGETABLES

Serves 4
Each serving equals 1 1/4 cups of fruit or vegetables


Ingredients
• 1 pound mushrooms, mixed fresh, cut in large pieces (white, portabella, shiitake, crimini, oyster)
• 1 sweet red bell pepper cut in 1-inch chunks
• 1 onion, medium, cut in 8 wedges
• ½ tsp salt
• 1 zucchini, large, cut in 1-inch chunks
• ½ Tbsp olive oil
• 1 tsp garlic, minced
• 1 tsp black pepper, ground


Directions
Preheat oven to 450 F.

In a 13x9x2 inch nonstick baking pan (or spray a conventional pan with vegetable cooking spray) place mushrooms, bell pepper, zucchini and onion.

Toss with olive oil, garlic, salt and black pepper.

Bake uncovered, until mushrooms and vegetables are tender, about 20 minutes.

Serve as a side dish, or toss with pasta or rice if desired.

Both.. Kinda.

I'm gradually weaning myself off meat (havent had any since Thursday).

Watched a program about chickens and I decided I can't eat meat again lol.

I also cant watch programs like that otherwise I would be put off for life too. Just guessing of course what the program would of been like :lol:

Thanks, all those sound good. I love marmalade on toast but it does not make for a great dinner. I will have a go at something new and hope for the best. :wink:

I did not get to watch it thank god, I heard the local talk show repeat last night and all the stuff that goes on. It put me off completely, my parents were wondering why all of a sudden I stopped eating it. I hear that chickens were being imported and been picked up by lorry and driven to a factory were all there foreign stickers were removed and replaced with Irish ones, so we are not buying Irish chickens :shock:
